Summer Pizza: Make It on the Grill

The only way to make pizza even better: grill it! Not only does grilling pizza result in a delightful, lightly charred crust, it’s also a perfect meal solution when it is too hot to turn on the oven. Tip: Use tongs or two spatulas to move the pizza easily on and off the grill if needed.

Ingredients

Flour (to dust work surface)

1/2 pound of prepared pizza dough

2 teaspoons extra-virgin olive oil

1/2 cup to 1 cup tomato sauce or diced tomatoes

Mozzarella or other cheese to melt on top

Other toppings as desired: lettuce, spinach, herbs, veggies, cooked meats or other cheeses

Grated Parmesan or other herbs for final topping

Directions

1. Prepare the grill for medium high cooking.

2. Lightly dust your work surface with flour.

3. Start with 1/2 pound of prepared pizza dough and divide it into two equal pieces.

4. Stretch the dough and press each piece into 8-inch circles.

5. Place pizza dough on sheet pan and lightly brush both sides of the dough with two teaspoons of extra-virgin olive oil.

6. Place dough on the grill (either directly on the grill or on a perforated sheet pan). With the lid open, rotate crust often using tongs or a spatula, flipping once until just toasted all over.

7. Take dough off grill and add tomato sauce and desired toppings.

8. Return to grill and close lid to heat topping and melt cheese.

9. Move to cutting board for serving and to add any toppings you do not want cooked such as fresh spinach, lettuce, grated cheese, etc.
